Cooking Corner: Potato Chip Chicken

This week, along with the white chocolate pumpkin snickerdoodles, I will be making potato chip chicken from the recipe located on the website: http://allrecipes.com/recipe/potato-chip-chicken/
- 2 pounds of skinless, boneless chicken breast meat
- 2 tablespoons of butter (melted)
- 1 teaspoon of salt
- 1 teaspoon of ground black pepper
- 1 cup of crushed potato chips
Procedure:
- To Marinate: Put the chicken breasts in a non-porous glass dish or bowl.
- Drizzle the melted butter, or margarine, over the chicken
- Season with salt and ground black pepper
- Cover the dish and refrigerate overnight
- Pre-heat the oven to 375 degrees
- Put the potato chip crumbs in a shallow dish or bowl
- Roll the chicken in crumbs until well coated, then place in a lightly greased 9×13 inch baking dish
- Bake at 375 for 45 minutes or until chicken juices run clear
