Cooking Corner: Potato Chip Chicken


This week, along with the white chocolate pumpkin snickerdoodles, I will be making potato chip chicken from the recipe located on the website:


  • 2 pounds of skinless, boneless chicken breast meat




  • 2 tablespoons of butter (melted)




  • 1 teaspoon of salt




  • 1 teaspoon of ground black pepper




  • 1 cup of crushed potato chips





  • To Marinate: Put the chicken breasts in a non-porous glass dish or bowl.




  • Drizzle the melted butter, or margarine, over the chicken




  • Season with salt and ground black pepper




  • Cover the dish and refrigerate overnight




  • Pre-heat the oven to 375 degrees




  • Put the potato chip crumbs in a shallow dish or bowl




  • Roll the chicken in crumbs until well coated, then place in a lightly greased 9×13 inch baking dish




  • Bake at 375 for 45 minutes or until chicken juices run clear
