Cooking Corner: Green Bean Spinach Pasta

If you are looking for a complex meal to cook on the weekend for a small get together, this green bean spinach pasta is perfect!

  • 1 box of pasta
  • 2 cups of green beans
  • ½ cup of butter
  • A pinch of minced garlic
  • 1 ½ cup of milk
  • 2 cups of mozzarella (shredded)
  • 2 cups of parmesan (grated)
  • 1 jar of white sauce
  • 3 cups of spinach

First, put a little butter in a skillet and turn the heat to medium. Make sure it is enough butter to fill the bottom of the skillet. Then, pour in the two cups of green beans and let cook for a few minutes. Once the green beans have heated up, add a pinch of minced garlic. Mix the green beans with the garlic until the garlic covers the green beans. Let sit on low heat. Next, take a larger skillet and add a little butter, same as before. Once the butter layers the bottom of the pan, add the milk. Stir in the mozzarella and parmesan into the milk and make sure the cheese has melted. Add the white sauce to the mixture. Let sit on medium heat until the sauce becomes thick. Next, fill a large pot with water and let boil. While waiting for the water to boil, wash and cut spinach finely and drop into a small pot on low. When the water has a rolling boil, add the pasta. Let pasta cook until aldente. Once the pasta is thoroughly cooked, strain and add to the white sauce mixture. Lastly, add the green beans and spinach. Let cool in a large bowl.

This dish is wonderful for a little get together with friends and is relatively easy to make. It is quite delicious for the summer/fall weather.
